Lemon Garlic Chicken Lettuce Wraps

1 lb ground chicken

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon freshly ground black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup shredded carrots

1 cup diced cucumber

1/4 cup chopped fresh cilantro

Salt to taste

8 large lettuce leaves (butter lettuce or romaine works best)

Lime wedges, for serving

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

    Add Chicken: Add the ground chicken to the skillet, breaking it apart with a wooden spoon. Cook until it’s browned and cooked through, about 5-7 minutes.

      Flavor the Chicken: Once the chicken is fully cooked, reduce the heat to medium. Stir in the lemon zest, lemon juice, soy sauce, honey, sesame oil, black pepper, and red pepper flakes (if using). Continue to cook for an additional 2-3 minutes to let the flavors meld together. Taste and adjust salt as needed.
