2 medium zucchinis, spiralized into noodles (zoodles)

2 boneless, skinless chicken breasts (about 1 lb)

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 lemon (juice and zest)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

½ cup cherry tomatoes, halved

¼ cup fresh parsley, chopped

Grated Parmesan cheese for serving (optional)

Instructions
 

Prepare the Chicken: Start by seasoning the chicken breasts with salt, pepper, and oregano. Set aside.

    Cooking the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the skillet and let it rest.

      Sauté the Zoodles: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the spiralized zucchini (zoodles) and cook for about 3-4 minutes, stirring gently until they're tender but still al dente.

        Combine Ingredients: Once the zoodles are cooked, add the cherry tomatoes, lemon juice, lemon zest, and red pepper flakes (if using) to the skillet. Toss everything together for about 1-2 minutes until the tomatoes are slightly softened.

          Slice the Chicken: While the zoodles are cooking, slice the rested chicken breasts into bite-sized pieces.

            Assemble the Bowls: Divide the zoodle mixture among serving bowls. Top with the sliced chicken and garnish with chopped parsley. Sprinkle with Parmesan cheese if desired.
