Ingredients

1 lb chicken tenders

1/2 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

3 cloves garlic, minced

Zest of 1 lemon

1/4 cup fresh lemon juice

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika (optional)

Olive oil spray (or a few tablespoons of olive oil for frying)

Instructions

Prepare the Marinade: In a large bowl, combine the lemon juice, minced garlic, lemon zest, salt, black pepper, and smoked paprika (if using). Add the chicken tenders to the bowl, ensuring they are well-coated. Let them marinate for at least 30 minutes to absorb the flavors.

Set Up Dredging Stations: In three separate shallow dishes, prepare the dredging stations. In the first dish, add the flour. In the second dish, beat the eggs. In the third dish, combine the breadcrumbs, grated Parmesan cheese, and chopped parsley.

Coat the Chicken: Remove each chicken tender from the marinade, allowing the excess sauce to drip off. Start by coating the chicken in the flour, shaking off the excess. Then, dip it into the beaten eggs, followed by the breadcrumb mixture, pressing slightly to ensure an even coating.

Cook the Chicken: Preheat your oven to 400°F (200°C). You can either bake or fry the chicken tenders. For baking, place them on a parchment-lined baking sheet, spray lightly with olive oil, and bake for 15-20 minutes, turning halfway, until golden brown and cooked through. For frying, heat olive oil in a large skillet over medium heat and fry the tenders for about 4-5 minutes on each side, or until crispy and fully cooked.

Serve and Enjoy: Once cooked, remove the chicken tenders from the oven or skillet. Let them rest for a couple of minutes before serving. These tenders are perfect with a side of lemon wedges and your favorite dipping sauce.
