Lemon Pepper Tilapia with Garlic Spinach

For the Lemon Pepper Tilapia:

4 tilapia fillets

3 tablespoons olive oil

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon lemon zest

1 teaspoon black pepper

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon dried parsley

For the Garlic Spinach:

8 cups fresh spinach

2 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Juice of 1/2 lemon

Instructions
 

Prepare the Tilapia Marinade:

    In a medium bowl, mix together the olive oil, lemon juice, lemon zest, black pepper, sea salt, garlic powder, and dried parsley to create a marinade.

      Marinate the Fish:

        Place the tilapia fillets in a shallow dish and pour the marinade over them. Ensure that all sides are coated well. Cover and let marinate in the refrigerator for at least 20 minutes (you can marinate for up to 1 hour for more flavor).

          Cook the Tilapia:

            Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Remove the tilapia from the marinade and place the fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the fish flakes easily with a fork and is opaque in the center.

              Prepare the Garlic Spinach:

                While the fish is baking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

                  Add Spinach:

                    Add the fresh spinach to the skillet and toss it in the garlic oil. Cook for 2-3 minutes, or until the spinach has wilted down. If desired, sprinkle with red pepper flakes for a bit of heat. Season with salt and pepper to taste, and squeeze the juice of half a lemon over the cooked spinach.

                      Plate the Dish:

                        Once the tilapia is cooked, remove it from the oven. Serve the lemon pepper tilapia alongside a generous helping of garlic spinach. Garnish with additional lemon wedges if desired.
