Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 tablespoons poppy seeds

½ cup sour cream

¼ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

Zest of 1 large lemon

2 tablespoons fresh lemon juice

2 tablespoons milk

Optional: ¼ cup chopped nuts (e.g., almonds or walnuts) for added crunch

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and poppy seeds until well combined.

Combine Wet Ingredients: In another bowl, mix the sour cream, vegetable oil, eggs, vanilla extract, lemon zest, lemon juice, and milk. Whisk until the mixture is smooth and uniform.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; be careful not to over-mix. If you’re adding chopped nuts, fold them in at this stage.

Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Enjoy: These lemon poppy seed muffins are delicious served warm or at room temperature. Enjoy them as a delightful breakfast treat or a snack throughout the day!
