Lentil Soup with Lemon and Spinach

1 cup green or brown lentils, rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon turmeric

Salt and pepper, to taste

4 cups fresh spinach, chopped

Juice of 1 large lemon

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Then, add the minced garlic, diced carrots, and diced celery. Cook for an additional 5-7 minutes until the vegetables are softened.

    Add Spices and Lentils: Stir in the ground cumin, smoked paprika, and turmeric. Cook for 1-2 minutes until the spices are fragrant. Then, add the rinsed lentils and stir to coat them with the spices.

      Pour in the Broth: Pour the vegetable broth into the pot. Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender.

        Incorporate Spinach and Lemon: Once the lentils are cooked, add the chopped spinach to the pot and stir it in. Allow the soup to cook for an additional 5 minutes until the spinach is wilted. Remove the pot from the heat and stir in the lemon juice.

          Season and Serve: Taste the soup and season with salt and pepper as needed. Ladle the soup into bowls and garnish with fresh parsley. Serve with lemon wedges on the side for an extra zing!
