2 ripe avocados

1 large cucumber, peeled and diced

1 ½ cups ripe tomatoes, coarsely chopped

½ red onion, finely chopped

2 cloves garlic, minced

2 cups vegetable broth (chilled)

1 lime, juiced

2 tablespoons olive oil

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

Fresh cilantro or mint for garnish

Optional: few drops of hot sauce for a kick

Instructions
 

In a blender, combine the ripe avocados, diced cucumber, chopped tomatoes, red onion, and minced garlic. Blend until smooth.

    Gradually add the chilled vegetable broth to the mixture while continuing to blend until you achieve a creamy, silky texture.

      Add the lime juice, olive oil, salt, and black pepper to the blender, and pulse a few more times to incorporate. Taste and adjust seasoning as needed.

        Pour the gazpacho into a large bowl or pitcher, cover, and chill in the refrigerator for at least 1 hour to allow flavors to meld.
