1 ½ cups Greek yogurt (plain or vanilla)

¼ cup honey or maple syrup

1 tablespoon lemon zest (about 1 lemon)

3 tablespoons fresh lemon juice

1 teaspoon vanilla extract

2 cups fresh blueberries (or frozen, thawed and drained)

1 cup rolled oats

¼ teaspoon salt

1 cup granola (optional, for topping)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract. Stir until the mixture is smooth and well blended.

    Add Blueberries: Gently fold in the fresh blueberries, being careful not to crush them. If using frozen blueberries, make sure they’re fully thawed and drained before adding.

      Combine with Oats: In another bowl, mix the rolled oats and salt. Gradually fold the oat mixture into the yogurt mixture, ensuring that the oats are evenly distributed.

        Line Your Pan: Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal. Pour the yogurt-oat mixture into the prepared pan, spreading it evenly.

            Freeze: Cover the pan with plastic wrap and place it in the freezer for at least 4 hours, or until fully set.
