Loaded Bacon and Cheeseburger Casserole

1 pound ground beef

4 strips of bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon mustard powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 cups frozen tater tots

2 cups shredded cheddar cheese

1 cup diced tomatoes (canned, drained or fresh)

1 cup sour cream

1/4 cup chopped green onions, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef and Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet. In the same skillet, add the ground beef and cook until browned. Drain excess grease if necessary.

      Add Aromatics: To the skillet with the ground beef, add the diced onion and garlic. Sauté until the onions are translucent, about 3-4 minutes.

        Season the Mixture: Stir in the Worcestershire sauce, mustard powder, smoked paprika, and season with salt and pepper. Mix well and let it cook for another 1-2 minutes to meld the flavors.

          Combine Ingredients: In a large bowl, mix together the beef mixture, crispy bacon, diced tomatoes, and 1 cup of cheddar cheese.

            Prepare the Casserole: In a greased 9x13-inch (or similar sized) casserole dish, spread half of the frozen tater tots evenly across the bottom. Pour the beef, bacon, and cheese mixture over the tater tots and spread evenly. Top with the remaining tater tots.

              Add Cheese and Bake: Sprinkle the remaining 1 cup of cheddar cheese over the top of the tater tots. Cover the casserole with aluminum foil and bake for 25 minutes.

                Finish Baking: After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the tater tots are golden brown and crispy, and the cheese is bubbly and melted.

                  Garnish and Serve: Remove from the oven and let it cool for 5 minutes. Slice into squares and top each serving with a dollop of sour cream and a sprinkle of chopped green onions.
