2 large sweet potatoes

1 cup cooked, shredded chicken

3/4 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup chopped green onions

1/4 cup cooked bacon bits (optional)

1 teaspoon olive oil

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake Sweet Potatoes: Wash the sweet potatoes thoroughly and poke several holes in them with a fork. Place them on a baking sheet lined with parchment paper. Bake for 45-50 minutes, or until they are tender when pierced with a knife.

      Prepare the Chicken: In a mixing bowl, combine the shredded chicken and BBQ sauce. Stir until the chicken is well coated.

        Scoop the Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool for a few minutes. Slice each sweet potato in half lengthwise and carefully scoop out a portion of the flesh, leaving about 1/4-inch of potato for stability. (You can save the scooped-out flesh for another recipe or mash it for a side dish.)

          Assemble the Skins: Brush the insides of the sweet potato skins with olive oil and season with salt and pepper. Fill each skin with the BBQ chicken mixture, pressing it in gently.

            Add Cheese: Top each loaded sweet potato with a generous amount of shredded cheddar cheese.

              Final Bake: Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Garnish: Remove from the oven and let cool for a few minutes. Drizzle the sour cream over each loaded sweet potato and sprinkle with chopped green onions, bacon bits, and fresh cilantro if desired.
