Ingredients
  

1 cup granulated sugar

1/4 cup water

1/2 cup heavy cream

1/4 cup unsalted butter, cubed

1/2 teaspoon sea salt, plus more for garnish

1 cup heavy whipping cream (for mousse)

3 large egg whites

1/4 cup powdered sugar

1 teaspoon vanilla extract

Instructions
 

Make the Salted Caramel:

    - In a medium saucepan, combine granulated sugar and water. Cook over medium heat without stirring until the sugar dissolves, then increase the heat to high and allow it to boil. Keep an eye on it until it turns a deep amber color, about 8-10 minutes.

      - Immediately remove from heat and whisk in the 1/2 cup of heavy cream carefully (it will bubble up). Then, stir in cubed butter and 1/2 teaspoon of sea salt until smooth. Allow the caramel to cool to room temperature.
