Ingredients

1 ripe mango, diced

1 can (15 oz) black beans, rinsed and drained

1 medium red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeds removed and finely chopped (adjust to taste)

Juice of 2 limes

1 tablespoon olive oil

1/2 teaspoon cumin

Salt and pepper to taste

Instructions

Prep the Ingredients: Start by dicing the ripe mango, bell pepper, and red onion. Finely chop the jalapeño after removing the seeds. Rinse and drain the black beans.

Combine the Main Ingredients: In a large mixing bowl, combine the diced mango, black beans, red bell pepper, red onion, cilantro, and jalapeño. Mix gently to avoid mashing the mango.

Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.

Mix Everything Together: Pour the dressing over the salsa mixture, and toss gently, making sure all the ingredients are evenly coated.

Taste and Adjust: Check the seasoning and adjust with more lime juice, salt, or pepper if necessary.

Chill: Cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serve: Serve chilled as a dip with tortilla chips or as a topping for grilled chicken or fish.
