Ingredients

1 lb baby carrots (or regular carrots cut into sticks)

3 tablespoons olive oil

2 tablespoons pure maple syrup

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will help achieve that delicious caramelization on the carrots.

Prepare the Carrots: If using regular carrots, peel and cut them into sticks about 1/2 inch thick. If you’re using baby carrots, you can leave them whole.

Make the Glaze: In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, and black pepper until well combined.

Coat the Carrots: Place the prepared carrots in a large mixing bowl or directly on a lined baking sheet. Drizzle the maple Dijon mixture over the carrots, tossing to ensure each piece is evenly coated.

Roast the Carrots: Spread the coated carrots in a single layer on the baking sheet, leaving space between them for even roasting.

Bake: Roast the carrots in the preheated oven for 20-25 minutes, turning halfway through, until they are tender and caramelized at the edges.

Garnish and Serve: Once done, remove the carrots from the oven and let them cool for a couple of minutes. Sprinkle with fresh chopped parsley for a pop of color and an extra layer of flavor. Serve warm as a delightful side dish!
