1 pound maple sausage (bulk or links, casings removed)

2 medium sweet potatoes, peeled and diced into small cubes

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

2 tablespoons olive oil

4 large eggs

Fresh parsley or chives, chopped (for garnish)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the maple sausage. Crumble it as it cooks, allowing it to brown evenly (about 5-7 minutes). Once browned, transfer the sausage to a plate and set aside, leaving the drippings in the skillet.

    Sauté the Vegetables: In the same skillet, add 2 tablespoons of olive oil if needed, then add the diced sweet potatoes. Cook for about 8-10 minutes, stirring occasionally, until they begin to soften.

      Add Aromatics: Stir in the diced onion, red bell pepper, and minced garlic. Sprinkle with smoked paprika and cayenne pepper (if using). Cook for an additional 5-7 minutes, until the vegetables are tender and slightly caramelized. Season with salt and pepper to taste.

        Combine Ingredients: Return the cooked sausage to the skillet, mixing it well with the sweet potatoes and veggies. Cook for another 2-3 minutes to reheat everything thoroughly.

          Cook the Eggs: Make 4 small wells in the mixture and crack an egg into each well. Cover the skillet with a lid and cook for 5-6 minutes, or until the eggs are set to your desired level of doneness.
