1 ½ cups all-purpose flour

½ cup unsalted butter, chilled and diced

¼ cup granulated sugar

1/4 teaspoon salt

1/4 cup cold water

For the filling:

4 ripe pears, peeled, cored, and sliced

1/2 cup walnuts, chopped

1/3 cup pure maple syrup

2 tablespoons all-purpose flour

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 tablespoon lemon juice

Pinch of salt

For topping:

1/4 cup oat flour (or additional all-purpose flour)

1/4 cup brown sugar

2 tablespoons melted butter

1 teaspoon cinnamon

Instructions
 

Make the crust:

    - In a mixing bowl, combine the flour, sugar, and salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

      - Gradually add cold water, one tablespoon at a time, until the mixture forms a dough. Be careful not to overwork it.

        - Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

          Prepare the filling:

            - In a large mixing bowl, toss the sliced pears with lemon juice, maple syrup, flour, vanilla extract, cinnamon, nutmeg, walnuts, and a pinch of salt. Ensure the pears are evenly coated. Set aside.

              Preheat the oven:

                - Preheat your oven to 375°F (190°C).

                  Roll out the crust:

                    - On a floured surface, roll out the dough to fit a 9-inch pie pan. Place the rolled dough into the pan, pressing it into the edges. Trim any excess dough hanging over the edges.
