Ingredients

2 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup low-sodium chicken broth

1/2 cup grated Parmesan cheese

8 ounces fettuccine pasta (or pasta of your choice)

Fresh basil leaves, for garnish

Red pepper flakes (optional, for heat)

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the skillet and let rest for 5 minutes before slicing.

Sauté the Garlic: In the same skillet, add minced garlic and dried Italian herbs. Sauté for about 1 minute until fragrant.

Add Tomatoes: Toss in the halved cherry tomatoes and cook for an additional 2-3 minutes, until they begin to soften.

Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

Thicken the Sauce: Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce. Season with additional salt and pepper to taste. If you like a bit of heat, add red pepper flakes at this stage.

Cook the Pasta: While the sauce is simmering, cook the fettuccine pasta according to package instructions in a separate pot. Drain and set aside.

Combine Everything: Add the cooked pasta to the sauce, and toss to coat evenly. Slice the rested chicken and place it on top of the pasta.

Garnish and Serve: Garnish with fresh basil leaves and serve immediately. Optional: sprinkle extra Parmesan cheese and red pepper flakes on top.
