Ingredients
  

1 cup couscous

1 1/4 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1/3 cup Kalamata olives, pitted and sliced

1/3 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Juice of 1 lemon

1/4 cup olive oil

1 tsp dried oregano

Salt and pepper, to taste

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, remove from heat, stir in the couscous, cover, and let it sit for about 5 minutes to allow the grains to absorb the liquid. Fluff the couscous with a fork once done.

    Prepare the Vegetables: While the couscous is cooking, chop the cherry tomatoes, cucumber, red onion, and red bell pepper into bite-sized pieces. Place them in a large mixing bowl.

      Add Olives and Feta: Add the sliced Kalamata olives and crumbled feta cheese to the bowl with the vegetables.

        Mix Herbs and Dressing: In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper. Add the chopped parsley and mint to the dressing, mixing well.

          Combine: Once the couscous has cooled slightly, add it to the bowl of vegetables and olives. Pour the dressing over the salad and gently toss until all ingredients are well combined.
