1 lb ground beef (or turkey for a lighter option)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

1 cup salsa (medium or hot based on preference)

2 cups crushed tortilla chips

2 cups shredded cheddar cheese (or a mix of cheeses)

1 cup sour cream

3 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Olive oil, for cooking

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the meat: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and cook until translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute until fragrant.

      Brown the beef: Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

        Season: Stir in the chili powder, cumin, paprika, and a pinch of salt and pepper. Cook for another minute, allowing the spices to release their aroma.

          Mix in beans and corn: Add the black beans, corn, and 1 cup of salsa to the skillet. Stir well to combine and let it simmer for about 5 minutes.

            Layer the bake: In a greased 9x13-inch baking dish, spread half of the crushed tortilla chips evenly on the bottom. Spoon half of the meat mixture over the chips, followed by half of the shredded cheese. Repeat the layers with the remaining chips, meat mixture, and top with the remaining cheese.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Prepare sour cream topping: While the taco bake is in the oven, mix the remaining salsa with sour cream in a small bowl. Set aside.

                  Serve: Once baked, remove from the oven and let it cool for a few minutes. Drizzle the sour cream salsa mixture over the top, and garnish with sliced green onions and fresh cilantro.

                    Enjoy: Scoop out portions and serve hot, with extra tortilla chips on the side if desired!
