4 small bell peppers (any color)

1 cup cooked quinoa (or rice)

1 cup black beans (drained and rinsed)

1 cup corn (fresh, frozen, or canned)

½ cup diced tomatoes (canned or fresh)

½ teaspoon cumin

½ teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or a blend)

Fresh cilantro or parsley for garnish

Lime wedges for serving

Prepare the Peppers: Start by washing the bell peppers. Slice them in half lengthwise and remove the seeds and membranes. Place the pepper halves in a bowl and set aside.

    Mix the Filling: In a mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, cumin, smoked paprika, garlic powder, salt, and pepper. Stir everything together until well mixed.

      Stuff the Peppers: Spoon the filling into each bell pepper half, packing it in nicely. Make sure to leave a little space at the top for the cheese.

        Air Frying Time: Preheat your air fryer to 350°F (175°C). Arrange the stuffed peppers in the air fryer basket, standing up. Cook in batches if necessary to avoid overcrowding. Air fry for 10 minutes.

          Add the Cheese: After 10 minutes, open the air fryer and sprinkle a generous amount of shredded cheese over each stuffed pepper. Close the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.

            Serve: Carefully remove the stuffed pepper boats from the air fryer. Garnish with fresh cilantro or parsley and serve with lime wedges on the side for an extra zing.
