4 medium zucchinis

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, finely chopped

1/2 cup corn (canned or frozen, thawed)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Using a spoon, scoop out the seeds and a bit of the flesh to create a hollow for the filling.

      Prepare the Filling: In a large bowl, combine the shredded chicken, BBQ sauce, chopped red onion, corn, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure everything is evenly coated with the BBQ sauce.
