1 block (14 oz) extra-firm tofu, pressed and cut into small cubes

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large whole wheat tortillas or wrap of choice

1 cup shredded lettuce

½ cup diced tomatoes

½ cup shredded carrots

½ cup vegan ranch dressing (store-bought or homemade)

Fresh parsley or cilantro, for garnish

Instructions
 

Prepare the Tofu: In a mixing bowl, toss the cubed tofu with olive oil, garlic powder, onion powder, salt, and pepper, ensuring all pieces are evenly coated.

    Bake the Tofu: Preheat your oven to 400°F (200°C). Spread the seasoned tofu on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden and crispy, flipping halfway through for even cooking.

      Add Buffalo Sauce: Once baked, transfer the tofu to a large bowl, pour the buffalo sauce over it, and gently toss until the tofu is well-coated. For extra flavor, let it sit for a few minutes to absorb the sauce.

        Assemble the Wraps: Lay out the tortillas on a clean surface. On each tortilla, add a layer of shredded lettuce, diced tomatoes, shredded carrots, and topped with the buffalo tofu.

          Drizzle the Dressing: Add a generous drizzle of vegan ranch dressing over the top of the tofu filling.
