1 cup graham cracker crumbs

1/4 cup sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

8 oz cream cheese, softened

1/3 cup granulated sugar

1/2 tsp vanilla extract

1 large egg

1/4 cup sour cream

1/2 tsp cinnamon

For the apple topping:

1 medium apple, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

2 tbsp sugar

1 tsp lemon juice

1/2 tsp cinnamon

For the caramel drizzle:

1/2 cup caramel sauce (store-bought or homemade)

Sea salt (optional, for garnish)

Preheat the Oven: Preheat your oven to 325°F (163°C). Prepare a mini muffin tin by greasing it lightly or lining it with mini cupcake liners.

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press about 1 tablespoon of the crust mixture into the bottom of each mini muffin cup. Press firmly to form a solid base.

      Prepare the Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract, egg, sour cream, and cinnamon; mix until everything is well incorporated.

        Fill the Cups: Spoon about 2 tablespoons of the cheesecake filling over the crust in each mini muffin cup, filling them about 3/4 full.

          Add the Apples: In a separate bowl, toss the diced apples with sugar, lemon juice, and cinnamon. Top each cheesecake bite with a small spoonful of the apple mixture.

            Bake: Place the mini muffin tin in the preheated oven and bake for 20-25 minutes, or until the cheesecake is set and slightly golden around the edges. The centers may still jiggle a little but will firm up as they cool.

              Cool & Chill: Once baked, remove the cheesecake bites from the oven and allow them to cool in the muffin tin for about 10 minutes. Then, transfer them to a wire rack to cool completely. Refrigerate for at least 2 hours before serving to let the flavors meld and for a firmer texture.

                Prepare Caramel Sauce: While the bites are chilling, if you're making homemade caramel, prepare that now. Otherwise, ensure your store-bought caramel sauce is ready for drizzling.

                  Serve: Once chilled, carefully remove each cheesecake bite from the muffin tin. Drizzle with caramel sauce and sprinkle with a touch of sea salt if desired.
