1 package of pre-made pie crust (2 crusts)

1 can (21 oz) cherry pie filling

2 tablespoons sugar

1 teaspoon vanilla extract

1 teaspoon cornstarch

1 large egg (for egg wash)

1 tablespoon milk (for egg wash)

Optional: powdered sugar (for dusting)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare Filling: In a bowl, mix the cherry pie filling, sugar, vanilla extract, and cornstarch until combined. Set aside for about 10 minutes to thicken.

      Roll Out Dough: On a lightly floured surface, roll out each pie crust to about 1/8 inch thick. Using a round cookie cutter or a glass (about 3 inches in diameter), cut out circles from the dough.

        Assemble Mini Pies: Place half of the circles on the prepared baking sheet. Spoon about 1 tablespoon of cherry filling into the center of each circle. Leave some space around the edges to ensure proper sealing.

          Top and Seal: Place another dough circle on top of each filled circle. Gently press the edges to seal, then use a fork to crimp the edges for an added decorative touch.

            Egg Wash: In a small bowl, whisk together the egg and milk to create an egg wash. Brush the tops of each pie with the egg wash to give them a nice golden color as they bake.

              Bake: Bake in the preheated oven for 15-18 minutes, or until the mini pies are golden brown.

                Cool and Dust: Allow the mini cherry pie bites to cool for a few minutes on the baking sheet, then transfer them to a wire rack. If desired, dust with powdered sugar for a sweet finishing touch.
