1 pound boneless, skinless chicken breasts, diced

1 packet ranch seasoning mix (about 1 oz)

1 tablespoon olive oil

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can (16.3 oz) refrigerated biscuit dough (8 biscuits)

1/2 cup sour cream

1/4 cup chopped green onions

1 teaspoon garlic powder

1/2 teaspoon black pepper

Prep the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and sprinkle with ranch seasoning, garlic powder, and black pepper. Cook for about 7-10 minutes, stirring occasionally, until the chicken is fully cooked and slightly golden. Remove from heat and let cool slightly.

    Blend Cheeses: In a medium bowl, combine the shredded cheddar and mozzarella cheeses, reserving a handful for topping.

      Prepare Biscuits: Preheat the oven according to the biscuit dough package instructions (typically 350°F/175°C). On a lightly floured surface, roll out each biscuit into a flat circle, about 4 inches in diameter.

        Assemble Melts: On half of each biscuit, layer a tablespoon of the chicken mixture, followed by a generous sprinkle of the cheese blend. Fold the other half of the biscuit over to create a pocket and pinch the edges to seal tightly.

          Bake: Place the filled biscuit pockets on a baking sheet lined with parchment paper. Brush the tops lightly with melted butter (optional) and sprinkle the reserved cheese on top.
