1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1 tbsp ground cumin

1 tbsp ground coriander

1 tbsp paprika

1 tsp ground turmeric

1 tsp ground cinnamon

1/2 tsp cayenne pepper (optional, for heat)

3 cloves garlic, minced

Salt and pepper to taste

4 large flour tortillas or flatbreads

1 cup Greek yogurt

1 tbsp tahini

1 tbsp lemon juice

1 tsp minced fresh dill (or 1/2 tsp dried dill)

1 cup chopped vegetables (like cucumber, tomato, and red onion)

Fresh parsley for garnish

Lemon wedges for serving

Instructions
 

Marinate the Chicken: In a medium bowl, mix the olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, garlic, salt, and pepper. Add the chicken thighs and coat them well with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: Preheat a grill pan or skillet over medium heat. Remove the chicken from the marinade and cook for about 5-7 minutes on each side, until fully cooked and juices run clear (internal temperature should reach 165°F). Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.

      Prepare the Sauce: In a small bowl, mix together the Greek yogurt, tahini, lemon juice, dill, salt, and pepper until smooth. This will be your creamy sauce.

        Assemble the Flatbread Squares:
