Mini Chicken & Spinach Skillet Cups

1 lb ground chicken

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 tsp garlic powder

1 tsp onion powder

1/2 tsp dried oregano

Salt and pepper to taste

1 package (12 oz) refrigerated pizza dough

Olive oil for greasing the skillet

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, add the ground chicken and cook until browned and fully cooked, about 6-8 minutes, breaking it up as it cooks. Drain any excess fat if necessary.

      Add Spinach: Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and let it cool slightly.

        Mix Cheese Filling: In a bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well until all the ingredients are fully incorporated.

          Combine Ingredients: Once the chicken and spinach mixture has cooled, add it to the cheese mixture and stir until combined.

            Prepare Pizza Dough: On a lightly floured surface, roll out the pizza dough. Using a round cookie cutter or a glass, cut out circles that are slightly larger than the cups of your skillet.

              Grease the Skillet: Lightly grease a well-seasoned cast-iron skillet or an oven-safe baking dish with olive oil.

                Assemble the Cups: Press each dough circle into the prepared skillet, forming small cups. Fill each cup with the chicken and spinach mixture, packing it gently.

                  Bake: Place the skillet in the preheated oven and bake for 20-25 minutes, or until the dough is golden brown and the tops are bubbly.

                    Cool & Serve: Remove from the oven and let it cool for a few minutes. Serve warm, garnished with some extra Parmesan cheese or fresh herbs if desired.
