1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1 tablespoon lime juice

Salt and pepper, to taste

10 mini soft taco shells (store-bought or homemade)

1 cup shredded cheddar cheese

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup sour cream

Fresh cilantro, for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft, about 2-3 minutes.

    Add Chicken and Seasoning: Increase the heat to medium-high and add the ground chicken to the skillet. Break it apart with a spatula. Season with taco seasoning, salt, pepper, and lime juice. Cook until the chicken is fully cooked and browned, about 7-10 minutes. Remove from heat.

      Fill the Taco Shells: Preheat your oven to 350°F (175°C). Take the mini soft taco shells and spoon a generous amount of the chicken mixture into each shell.

        Add Cheese: Sprinkle shredded cheddar cheese evenly over the top of each filled taco shell.

          Bake the Melts: Arrange the filled taco shells on a baking sheet. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
