Ingredients

6 slices of thick bread (e.g., challah, brioche, or sourdough)

3 large eggs

1/2 cup whole milk

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon sugar (optional, for sweetness)

2 tablespoons butter (for cooking)

1 cup mixed berries (e.g., strawberries, blueberries, raspberries)

Maple syrup (for serving)

Powdered sugar (for dusting)

Fresh mint leaves (optional, for garnish)

Instructions

Prep the Bread: Cut each slice of bread into quarters to create small squares or bites. Set aside in a mixing bowl.

Mix the Egg Mixture: In a separate bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar (if using) until well combined.

Coat the Bread: Pour the egg mixture over the bread bites in the bowl, making sure all pieces are well coated. Let them soak for about 5-7 minutes, turning occasionally to ensure even absorption.

Heat the Skillet: In a non-stick skillet or griddle, melt 1 tablespoon of butter over medium heat.

Cook the Bites: Once the skillet is hot, add the soaked bread bites in batches (don’t overcrowd). Cook for 2-3 minutes on each side until golden brown and slightly crispy. Add more butter as needed when cooking additional batches.

Prepare the Berries: While the bites are cooking, rinse your mixed berries and set them aside to drain.

Serve: Once all the bites are cooked, arrange them on a serving platter. Top with a handful of fresh berries, a drizzle of maple syrup, and a dusting of powdered sugar. Garnish with fresh mint leaves if desired.

Enjoy: Serve warm and enjoy this delightful mini brunch treat!
