Ingredients

8 slices of white or whole grain bread, cut into 1-inch squares

8 oz sharp cheddar cheese, cut into 1-inch cubes

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves

2 tbsp unsalted butter, softened

1 tbsp olive oil

Salt and pepper to taste

Skewers (8-10 inches long)

Instructions

Prepare the Skewers: Begin by soaking wooden skewers in water for 30 minutes to prevent burning during grilling, if using wooden skewers.

Assemble the Ingredients: On each skewer, thread the following in this order: 1 bread square, 1 basil leaf, 1 cheese cube, and 1 cherry tomato half. Repeat the sequence until the skewer is filled, leaving a little space at the ends for handling. Aim for 2-3 of each element per skewer.

Preheat the Grill: Heat your grill to medium-low. If using a stovetop grill pan, also preheat that over medium heat.

Butter the Skewers: Spread the softened butter and drizzle the olive oil over each skewer, ensuring all sides of the bread are coated. Season with salt and pepper to taste.

Grill the Skewers: Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted. Keep an eye on them to prevent burning.

Serve: Once grilled, carefully remove the skewers from the grill. Allow them to cool slightly before serving. Garnish with extra fresh basil if desired and enjoy while warm!
