For the taco filling:

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 cup Hatch green chiles, diced (fresh or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

1 cup black beans, rinsed and drained (optional)

For the toppings:

1 cup shredded cheddar cheese

1 cup diced tomatoes

½ cup sour cream or Greek yogurt

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

For the mini taco shells:

12 small corn tortillas (about 4 inches in diameter)

Cooking oil (for frying or lightly brushing)

Instructions
 

Prepare the Taco Filling:

    - In a large skillet, heat a drizzle of oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

      - Add the minced garlic and cook for another minute until fragrant.

        - Increase the heat to medium-high and add the ground beef or turkey. Season with cumin, smoked paprika, chili powder, salt, and pepper. Cook until the meat is browned and cooked through, approximately 5-7 minutes.

          - Stir in the diced Hatch chiles and black beans (if using) and cook for an additional 3-4 minutes until everything is well combined and heated through. Remove from heat.

            Prepare Mini Taco Shells:

              - For crispy tacos, heat 1-2 inches of oil in a deep skillet over medium heat.

                - Once the oil is hot, gently fry each tortilla for about 30 seconds on each side, folding them in half to form a taco shape. Use tongs to hold them in place while frying.

                  - Remove the tacos and place them on a paper towel-lined plate to absorb excess oil. If you'd prefer baked tacos, simply brush each tortilla lightly with oil and bake in a preheated oven at 400°F (200°C) for about 5-7 minutes or until slightly crispy.

                    Assemble the Tacos:

                      - Spoon the prepared filling into each mini taco shell. Top with shredded cheese, diced tomatoes, avocado, and a dollop of sour cream or Greek yogurt.

                        - Finish with freshly chopped cilantro and serve with lime wedges on the side for squeezing over the tacos.
