8 oz. penne pasta

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 large egg

1 tsp garlic powder

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or olive oil.

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a large bowl, combine the cooked pasta, marinara sauce, mozzarella cheese, half of the pepperoni slices, ricotta cheese, Parmesan cheese, egg, garlic powder, oregano, red pepper flakes, salt, and pepper. Mix until well combined.

        Fill the Muffin Tin: Spoon the pasta mixture into the greased muffin tin, filling each cup about 3/4 full. Press down gently to pack the mixture. Top each bite with the remaining pepperoni slices.

          Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the cheese is bubbly.

            Cool and Remove: Once baked, allow the mini pasta bites to cool for about 5 minutes. Carefully run a knife around the edges to loosen them and then gently remove them from the muffin tin.
