Mini Pizza Stuffed Mushrooms

20 large button mushrooms

1 cup pizza sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup pepperoni slices, chopped

¼ cup bell pepper, finely diced (any color)

¼ cup onion, finely diced

1 teaspoon Italian seasoning (oregano, basil, thyme mix)

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil (for drizzling)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth. Remove the stems and set the caps aside. Chop the stems finely and reserve them for the filling.

      Sauté the Filling: In a skillet over medium heat, add a drizzle of olive oil. Add the chopped mushroom stems, diced onion, and bell pepper. Sauté for about 3-5 minutes until softened and aromatic. Remove from heat and let cool slightly.

        Mix the Stuffing: In a bowl, combine the sautéed vegetables, chopped pepperoni, 1 cup of shredded mozzarella cheese, and Italian seasoning. Mix well. Season with salt and pepper to taste.

          Stuff the Mushrooms: Use a spoon to fill each mushroom cap with the pizza filling mixture. Pack it in generously, letting it mound slightly above the rim.

            Top with Cheese: Place the filled mushrooms onto a baking sheet lined with parchment paper. Drizzle a little olive oil over the tops and sprinkle the remaining mozzarella cheese evenly over each stuffed mushroom.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven, let them cool for a couple of minutes, then sprinkle with fresh parsley before serving. Serve with extra pizza sauce on the side for dipping if desired.
