Mini Stuffed Bell Pepper Bites

12 mini bell peppers (assorted colors)

1 cup cooked quinoa (or rice)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

1 cup cherry tomatoes, diced

1 cup shredded cheddar cheese (or dairy-free alternative)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped (optional)

2 tablespoons olive oil

1 lime, juiced (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Mini Peppers: Slice the mini bell peppers in half lengthwise and remove the seeds. Arrange them cut-side up on a baking sheet lined with parchment paper.

      Make the Filling: In a large mixing bowl, combine the cooked quinoa (or rice), black beans, corn, red onion, cherry tomatoes, half the cheese, ground cumin, smoked paprika, garlic powder, and salt and pepper. Mix everything together until well combined. If you're using cilantro, add it to the mixture as well.

        Stuff the Peppers: Spoon the filling into each mini bell pepper half, pressing down slightly to pack the filling in. Once all the peppers are filled, sprinkle the remaining cheese evenly over the top.

          Drizzle with Olive Oil: Lightly drizzle olive oil over the stuffed peppers to promote even cooking and a nice golden color.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.

              Serve: Once baked, remove the mini stuffed peppers from the oven and let them cool for a few minutes. Drizzle with lime juice before serving for an added zing!
