1 cup sweet corn kernels (fresh or frozen)

1 cup tortilla chips (mini or broken into pieces)

1 cup shredded cheddar cheese

1/2 cup black beans (drained and rinsed)

1/2 cup diced tomatoes

1/4 cup diced red onions

1 jalapeño, thinly sliced (optional)

1/4 cup sour cream or Greek yogurt

2 tablespoons fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Season the Corn: In a frying pan, heat olive oil over medium heat. Add the sweet corn, cumin, chili powder, salt, and pepper. Sauté for about 3-5 minutes until the corn is heated through and slightly charred. Remove from heat and set aside.

      Prepare the Tortilla Chips: On a baking sheet, layer the tortilla chips evenly. Sprinkle half of the shredded cheddar cheese over the chips.
