1 lb ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 cup canned black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (or salsa)

1 cup shredded cheddar cheese (plus more for topping)

6 large eggs

1 cup milk

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp pepper

Chopped fresh cilantro (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) along with the diced onion. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute.

      Season: Sprinkle the taco seasoning over the meat mixture, and add the black beans, corn, and diced tomatoes (or salsa). Stir until everything is well combined. Remove from heat.

        Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper until smooth and fully combined.

          Combine: Fold the meat mixture into the egg batter, making sure to distribute the ingredients evenly. Gently fold in 1 cup of shredded cheddar cheese.

            Fill Muffin Tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Top each muffin with a sprinkle of additional cheddar cheese.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are set in the center and golden on top. A toothpick inserted in the center should come out clean.

                Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then gently transfer them to a wire rack. Serve warm, garnished with chopped cilantro and a dollop of sour cream if desired.
