Mini Taco Cups with Cheese and Beef

1 pound ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1 can (15 oz) refried beans

1 package (15 oz) wonton wrappers

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

½ cup sour cream

¼ cup sliced jalapeños (optional)

Cooking spray

Fresh cilantro leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and onions are translucent, about 6-7 minutes. Drain any excess grease.

      Season the Meat: Add taco seasoning to the beef mixture according to package instructions. Stir in the refried beans, mixing well until everything is heated through. Set aside.

        Prepare Wonton Cups: Lightly spray a muffin tin with cooking spray. Carefully press wonton wrappers into each muffin cup to form little cups, making sure to create an even layer that covers the bottom and sides.

          Fill the Cups: Place about 1 tablespoon of the beef and bean mixture into each wonton cup. Top each filled cup with shredded cheddar cheese.

            Bake: Place the muffin tin in the preheated oven and bake for about 10-12 minutes, or until the edges of the wonton wrappers are golden and the cheese is melted and bubbly.

              Add Toppings: Remove the taco cups from the oven and let them cool for a few minutes. Then, top with shredded lettuce, diced tomatoes, a dollop of sour cream, and jalapeños if desired.

                Garnish and Serve: Garnish with fresh cilantro leaves if you like, and serve warm. These mini taco cups make an excellent appetizer or snack for any gathering!
