12 mini bell peppers (assorted colors)

1 lb ground turkey or beef

1 cup cooked rice (white or brown)

1 cup canned black beans (rinsed and drained)

1 cup corn (frozen or fresh)

1 packet taco seasoning (about 1 oz)

1 cup shredded cheddar cheese

½ cup sour cream

2 green onions (chopped)

Fresh cilantro (for garnish)

Olive oil (for drizzling)

Salt and pepper (to taste)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Wash the mini bell peppers and slice them in half lengthwise. Remove seeds and membranes to create little boats. Place them, cut-side up, in a baking dish.

      Cook the Meat: In a large skillet over medium heat, drizzle with olive oil. Add the ground turkey or beef and cook until browned, about 5-7 minutes. Break it up with a spatula as it cooks.

        Add the Filling: Once the meat is fully cooked, stir in taco seasoning, cooked rice, black beans, and corn. Mix well and let it cook for another 2-3 minutes until heated through. Taste and season with salt and pepper as needed.

          Stuff the Peppers: Carefully spoon the taco mixture into each mini bell pepper half, packing it in lightly.

            Top with Cheese: Sprinkle shredded cheddar cheese evenly over the stuffed peppers.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and peppers are tender.

                Finish and Serve: Remove from the oven and let cool for a few minutes. Drizzle with sour cream, sprinkle with chopped green onions, and garnish with fresh cilantro. Serve warm and enjoy!
