2 cups frozen tater tots

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/4 cup diced green onions

Salt and pepper to taste

Cooking spray or olive oil

Optional: cooked and crumbled bacon or sausage for added flavor

Preheat the Oven: Preheat your oven to 425°F (220°C). Prepare a muffin tin by spraying it with cooking spray or lightly greasing it with olive oil.

    Form the Tater Tot Crusts: In a large bowl, spread the frozen tater tots evenly. Using your hands, crush and shape them slightly to form a crust for your mini nests. Place about 4-5 tater tots in each muffin cup, pressing them firmly against the bottom and sides to create a nest-like shape.

      Bake the Crusts: Place the muffin tin in the preheated oven and bake for 15-18 minutes or until the tater tots are golden brown and crispy.

        Prepare the Egg Mixture: While the crusts are baking, whisk together the eggs, milk, salt, and pepper in a medium bowl. Stir in the diced bell peppers, green onions, and half of the shredded cheddar cheese. If you're adding bacon or sausage, fold it in as well.

          Fill the Nests: Once the tater tot crusts are done baking, remove the muffin tin from the oven. Carefully pour the egg mixture into each tater tot nest, filling them about 3/4 of the way full. Sprinkle the remaining cheddar cheese evenly over the top.

            Bake the Nests: Return the muffin tin to the oven and bake for an additional 15-20 minutes or until the egg is set and the cheese is bubbly and golden.

              Cool and Serve: Allow the mini nests to cool for a few minutes before carefully removing them from the muffin tin. Serve warm and enjoy your delicious and cheesy breakfast!
