Mini Waffle Pizzas

2 cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 3/4 cups milk

1/2 cup melted butter

1 cup pizza sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

1 cup assorted toppings (pepperoni, bell peppers, mushrooms, olives, etc.)

Fresh basil leaves (for garnish)

Olive oil or cooking spray (for greasing the waffle iron)

Instructions
 

Prepare the Waffle Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. In another bowl, whisk the eggs and then mix in the milk and melted butter. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.

    Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the waffle plates with olive oil or cooking spray to prevent sticking.

      Make the Waffles: Pour about 1/4 to 1/3 cup of the batter onto each section of the preheated waffle iron. Close the lid and cook until golden brown and crispy, approximately 4-5 minutes. Repeat until all batter is used. You should end up with about 8-10 mini waffles.

        Assemble the Pizzas: Preheat your oven to 400°F (200°C). Place the cooked waffles on a baking sheet. Spoon a generous amount of pizza sauce onto each waffle, then sprinkle with shredded mozzarella cheese and your choice of toppings.

          Bake the Pizzas: Transfer the baking sheet to the preheated oven and bake for about 8-10 minutes, or until the cheese is melted and bubbly.

            Garnish & Serve: Remove from the oven and allow to cool slightly. Top with fresh basil leaves if desired. Serve immediately while hot and cheesy!
