1 cup pitted dates

1 cup walnuts (or pecans)

1/2 cup unsweetened cocoa powder

1/4 cup almond butter (or peanut butter)

1/4 cup maple syrup (or honey)

1 tsp vanilla extract

1/4 tsp sea salt

1/2 cup mini chocolate chips (optional)

Unsweetened shredded coconut, for rolling (optional)

Instructions
 

Prepare Dates: If your dates are not soft, soak them in warm water for about 10 minutes to soften. Drain and set aside.

    Blend Nuts: In a food processor, add the walnuts (or pecans) and pulse until coarsely chopped.

      Add Remaining Ingredients: Add the soft pitted dates, unsweetened cocoa powder, almond butter, maple syrup, vanilla extract, and sea salt to the food processor. Pulse together until you have a well-combined, sticky mixture. If you're using mini chocolate chips, fold them in at this step.

        Form Bites: With clean hands, grab a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is shaped into bites.
