8 oz (225g) cream cheese, softened

1/2 cup (60g) powdered sugar

1 teaspoon vanilla extract

1 cup (240ml) heavy whipping cream

1 tablespoon lemon juice

1 cup (100g) graham cracker crumbs

1/4 cup (50g) granulated sugar

1/2 cup (115g) unsalted butter, melted

For Topping:

Fresh berries (strawberries, blueberries, or raspberries)

Instructions
 

Make the Crust:

    - In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and resemble wet sand.

      - Divide the mixture evenly among serving cups (about 4 or 6 depending on size) and press it firmly into the bottom to form a compact crust layer.

        Prepare the Cheesecake filling:

          - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

            - Gradually add the powdered sugar and mix until fully combined and there are no lumps.

              - Stir in the vanilla extract and lemon juice until incorporated.

                Whip the Cream:

                  - In a separate bowl, use clean beaters to whip the heavy cream until stiff peaks form. This should take about 3-4 minutes.

                    - Gently fold the whipped cream into the cream cheese mixture in three additions. Be careful not to deflate the whipped cream; you want the mixture to remain light and airy.
