Ingredients

1 cup almond flour (or regular flour if preferred)

1/2 cup rolled oats

1/3 cup brown sugar (packed)

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup unsweetened almond butter (or peanut butter)

2 tablespoons coconut oil (melted)

1/4 cup mini chocolate chips

Optional: 2 tablespoons milk (dairy or non-dairy) for a creamier dough

Instructions

Prepare Your Base: In a large mixing bowl, combine the almond flour, rolled oats, brown sugar, granulated sugar, and salt. Mix until evenly blended.

Add Wet Ingredients: Add the almond butter, melted coconut oil, and vanilla extract to the dry ingredients. If you want a creamier texture, add the milk as well. Use a spatula or your hands to mix until a dough forms.

Fold in Chocolate Chips: Gently fold in the mini chocolate chips until they are evenly distributed throughout the dough.

Set in Pan: Line an 8x8 inch baking dish with parchment paper for easy removal. Press the dough evenly into the bottom of the pan, making sure to compact it well.

Chill: Place the pan in the refrigerator for at least 30 minutes to firm up the bars.

Cut and Serve: Once chilled, remove the bars from the pan by lifting the parchment paper. Cut into squares or rectangles as desired.

Enjoy: Store any leftovers in an airtight container in the fridge for up to one week.
