No-Bake Chocolate Oat Bars

2 cups rolled oats

1 cup creamy peanut butter (or almond butter)

1 cup honey or maple syrup

½ cup unsweetened cocoa powder

1 teaspoon vanilla extract

½ teaspoon salt

1 cup dark chocolate chips

½ cup chopped nuts (walnuts or almonds) - optional

½ cup shredded coconut - optional

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats, unsweetened cocoa powder, and salt. Mix well until the dry ingredients are evenly distributed.

    Combine Wet Ingredients: In a separate microwave-safe bowl, add the creamy peanut butter and honey (or maple syrup). Heat in the microwave for about 30-45 seconds until warm and slightly melted, then stir until smooth and well combined.

      Mix Together: Pour the warm peanut butter mixture over the dry oat mixture. Add the vanilla extract and mix until everything is well combined. If you're using chopped nuts or shredded coconut, fold them in at this stage.

        Press into Pan: Line an 8x8 inch (or similar size) square baking pan with parchment paper or lightly grease it. Transfer the mixture to the pan and use a spatula or your hands to press it firmly and evenly into the bottom of the pan.

          Melt the Chocolate: In a microwave-safe bowl, melt dark chocolate chips in 30-second intervals, stirring in between, until completely smooth and melted.

            Top with Chocolate: Pour the melted chocolate over the pressed oat mixture, spreading it evenly with a spatula.

              Chill: Place the pan in the refrigerator for about 1-2 hours, or until the chocolate has set and the bars are firm.
