No-Bake Lemon Raspberry Bars

For the Base:

1 ½ cups almond flour

½ cup rolled oats

⅓ cup maple syrup

⅓ cup coconut oil, melted

¼ teaspoon salt

For the Lemon Layer:

1 ½ cups cashews, soaked for 4 hours and drained

½ cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 1 lemon

⅓ cup maple syrup

2 tablespoons coconut oil, melted

½ teaspoon vanilla extract

1-2 tablespoons plant-based milk (optional, for thinning)

For the Raspberry Topping:

1 ½ cups fresh raspberries (plus extra for garnish)

2-3 tablespoons maple syrup (adjust to taste)

1 tablespoon lemon juice

Instructions
 

Prepare the Base:

    - In a large mixing bowl, combine almond flour, rolled oats, maple syrup, coconut oil, and salt. Mix until well combined and crumbly.

      - Press the mixture firmly into the bottom of an 8x8 inch (or similar-sized) pan lined with parchment paper. Make sure to pack it down evenly. Set aside.

        Make the Lemon Layer:

          - In a high-speed blender or food processor, combine the soaked cashews, lemon juice, lemon zest, maple syrup, melted coconut oil, and vanilla extract. Blend until smooth and creamy.

            - If the mixture is too thick, add plant-based milk a tablespoon at a time until you reach a creamy, spreadable consistency.

              - Pour the lemon mixture over the prepared base and spread it out evenly using a spatula. Place it in the freezer to set for about 30 minutes.

                Prepare the Raspberry Topping:

                  - In a small saucepan over medium heat, combine the raspberries, maple syrup, and lemon juice.

                    - Cook for about 5-7 minutes, gently mashing the raspberries to create a sauce. Once thickened, remove from heat and let cool slightly.

                      Assemble the Bars:

                        - Once the lemon layer has set, take the pan out of the freezer and pour the raspberry sauce evenly on top of the lemon layer. Spread it gently with a spatula if needed.

                          - Return the bars to the freezer for another 1-2 hours or until fully set.

                            Serve:

                              - When ready to serve, remove the bars from the pan using the parchment paper, and cut them into squares or rectangles.
