200g digestive biscuits (or graham crackers)

100g unsalted butter, melted

2 tablespoons granulated sugar

For the Caramel Layer:

300g sweetened condensed milk

100g unsalted butter

150g light brown sugar

1 teaspoon vanilla extract

A pinch of salt

For the Chocolate Topping:

200g dark chocolate (70% cocoa), chopped

2 tablespoons unsalted butter

Instructions
 

Prepare the Base:

    - Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a zip-lock bag and rolling over them with a rolling pin.

      - In a mixing bowl, combine the crushed biscuits, melted butter, and granulated sugar until fully mixed.

        - Press the mixture firmly into the bottom of a lined 9-inch square baking pan. Use the back of a spoon or the bottom of a glass to make it even and compact.

          Make the Caramel Layer:

            - In a saucepan over medium heat, combine the sweetened condensed milk, unsalted butter, light brown sugar, and a pinch of salt. Stir continuously until the mixture comes to a gentle boil.

              - Allow it to boil gently for 5-7 minutes, stirring constantly to prevent burning. The caramel should thicken and become a rich golden color.

                - Remove from heat and stir in the vanilla extract.

                  - Pour the caramel over the biscuit base, spreading it evenly. Allow it to cool to room temperature, then refrigerate for at least 1 hour to set.

                    Prepare the Chocolate Topping:

                      - In a heat-proof bowl, combine the chopped dark chocolate and unsalted butter. Melt together in the microwave in 30-second intervals, stirring in between until smooth. Alternatively, use a double boiler if preferred.

                        - Once melted and smooth, pour the chocolate over the set caramel layer, spreading it evenly with a spatula.

                          Set the Shortbread:

                            - Return the pan to the fridge for another 1-2 hours, or until the chocolate is completely set.
