Ingredients

For the Crust:

24 Oreo cookies (crushed)

1/2 cup unsalted butter (melted)

For the Cheesecake Filling:

16 oz cream cheese (softened)

1 cup creamy peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream (chilled)

For Topping:

8 Oreo cookies (coarsely crushed)

1/2 cup peanut butter cups (mini, chopped)

Chocolate syrup (for drizzle)

Instructions

Prepare the Crust:

    - In a mixing bowl, combine the crushed Oreo cookies and melted butter. Mix until all the crumbs are evenly coated in butter.

      - Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Chill in the refrigerator while preparing the filling.

        Make the Cheesecake Filling:

          - In a large bowl, beat the softened cream cheese and peanut butter with an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).

            - Gradually add in the powdered sugar and vanilla extract, continuing to mix until well combined.

              - In a separate bowl, whip the chilled heavy cream until it forms stiff peaks. Gently fold the whipped cream into the peanut butter mixture, being careful not to deflate the cream.

                Assemble the Cheesecake:

                  - Pour the cheesecake filling over the chilled Oreo crust, spreading it out evenly with a spatula.

                    - Sprinkle the coarsely crushed Oreos and chopped peanut butter cups over the top of the cheesecake, pressing them lightly into the filling for good adhesion.

                      Chill:

                        - Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow it to set properly.

                          Serve:

                            - Once set, carefully remove the sides of the springform pan. Drizzle chocolate syrup over the top just before serving, and slice into pieces.
