1 pound (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 cup broccoli florets

1 medium carrot, julienned

4 cloves garlic, minced

1 inch fresh ginger, grated

3 green onions, chopped (whites and greens separated)

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or noodles for serving (optional)

Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, oyster sauce, and cornstarch. Mix well to ensure the beef is evenly coated. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prep the Vegetables: Wash and slice the bell peppers, broccoli, and carrot. Mince the garlic and grate the ginger. Chop the green onions, keeping the white parts separate from the green tops.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

        Stir-Fry the Beef: Once the oil is hot, add the marinated beef in a single layer. Allow it to sear for about 2-3 minutes without stirring, then stir-fry for an additional 2 minutes until browned and cooked through. Remove the beef from the pan and set aside.
