One-Pan Cheesy Beef and Rice Casserole

1 lb ground beef

1 cup long-grain white rice, rinsed

1 medium onion, diced

3 cloves garlic, minced

1 medium bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 teaspoon paprika

1 teaspoon Italian seasoning

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large skillet or Dutch oven over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess grease if necessary.

    Add Vegetables: Stir in the diced onion, garlic, and bell pepper to the beef. Sauté until the vegetables are soft, about 3-4 minutes.

      Mix in Rice and Tomatoes: Add the rinsed rice to the beef mixture, stirring to coat the rice in the flavors. Then, pour in the diced tomatoes (with their juices) and beef broth.

        Season It Up: Sprinkle in the paprika, Italian seasoning, salt, and black pepper. Stir everything together until well combined.

          Simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed most of the liquid, stirring occasionally.

            Cheese It Up: Remove the lid and add the shredded cheddar and mozzarella cheese over the top. Cover again and let it sit for 5 minutes off the heat, allowing the cheese to melt beautifully.
