1 lb ground beef

1 cup long-grain white rice

1 medium onion, diced

2 cloves garlic, minced

1 cup bell pepper, diced (any color)

1 (15 oz) can diced tomatoes (with juices)

2 cups beef broth

1 cup frozen corn

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp cumin

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Brown the Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Season with salt and pepper.

    Sauté Vegetables: Add diced onion, bell pepper, and minced garlic to the skillet. Sauté for another 3-4 minutes until the vegetables are softened.

      Add Rice and Spices: Stir in the rice, smoked paprika, oregano, and cumin. Mix well to coat the rice with the beef and spices.

        Combine Liquids: Pour in the diced tomatoes (with juices) and beef broth. Stir everything to combine evenly.

          Cook the Rice: Bring the mixture to a simmer. Cover the skillet with a lid, reduce the heat to low, and cook for 18-20 minutes or until the rice is tender and the liquid is absorbed. Do not open the lid during cooking to maintain steam.

            Add Corn and Cheese: Once the rice is cooked, remove the skillet from heat. Stir in the frozen corn and half of the shredded cheddar cheese. Mix until the cheese is melted and everything is well combined.

              Garnish and Serve: Sprinkle the remaining cheese on top, cover again for 2-3 minutes to melt the cheese, and garnish with chopped cilantro or parsley if desired.
