1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice, rinsed

2 cups low-sodium chicken broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (carrots, peas, corn)

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: In a large skillet or pan over medium-high heat, add the olive oil. Once hot, add the chicken pieces. Season with salt, pepper, and paprika. Cook until browned on all sides, about 5-7 minutes. Once cooked, remove the chicken from the pan and set aside.

    Sauté Aromatics: In the same pan, add the chopped onion. Sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute, until fragrant.

      Add Rice: Stir in the rinsed rice into the pan with the onions and garlic. Toast the rice for about 2 minutes, stirring frequently.

        Combine Ingredients: Pour in the chicken broth and stir in the mixed vegetables and dried Italian herbs. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low. Return the browned chicken to the pan, cover, and let it simmer for about 18-20 minutes or until the rice is cooked and has absorbed most of the liquid.

            Add Cheese: Once cooked, remove the pan from heat. Sprinkle the shredded cheddar cheese over the top, cover, and let it sit for about 5 minutes, allowing the cheese to melt.

              Garnish and Serve: Fluff the casserole with a fork. Garnish with freshly chopped parsley and serve warm.
